Mommy, can we have octopus for dinner?

If  you heard this come out of the mouth of a 4 year old, you’d probably be thinking “what in the world”!!  Yeah, I’ve never had actual octopus and I’m pretty sure Jaxon hasn’t either.  What he is referring to is the super cool octopus I made a few weeks ago!

Here’s what I did::

I simply skewed raw spaghetti noodles through pieces of all beef hotdogs (we had grilled them the night before).  Then I just dropped them into boiling water…  about 8 minutes later….

Cinnamon apples, cheese slices and a little octopus! Of course he ate more than one of those little guys!

He loved it and has asked me to make them several times!

grandmother's (Gregg) banana pudding

Last year sometime I went to my grandparents for dinner and she had the most amazing banana pudding.  I wrote down her recipe and unfortunately forgot about it until this summer.  I’ve made this several times this summer and it’s always a hit!  In fact, we usually don’t get much of it before it’s gone.  I made some last week to take to the Conley’s house for dessert.  Joey asked me to make extra so we’d have some here too.  The good thing is that it makes quite a bit so I just split it into two dishes (actually 3, I took one to my very pregnant friend, Tracy).  Anyhow… here’s the recipe!  Enjoy!

  • 1 block Cream Cheese
  • 1 can Sweetened, Condensed Milk
  • 1 package Vanilla Instant Pudding (large Box)
  • 3 cups Cold Milk
  • 1 tub Cool Whip (large Tub)
  • 5 whole Bananas (ripe)
  • 1 box(es) Vanilla Wafers

Preparation Instructions

In a mixer, combine the cream cheese and condensed milk. Mix until smooth. Add the vanilla pudding mix. Gradually add the 3 cups of milk. Mix for about 5 minutes or until smooth. Fold in half tub of cool whip. Slice bananas and sprinkle with lemon juice to prevent browning. Layer bananas, pudding, crushed vanilla wafers, repeat. Top with remaining cool whip. Garnish with vanilla wafers and leftover bananas. Refrigerate for at least an hour. Enjoy and be prepared to make more soon! (WARNING… It is rich)

Big Ol' Post

Where did this week go? I can’t believe I haven’t posted since last Monday! Joey was on Fall break Thursday & Friday, so he & Jax were home. Yesterday Jaxon started getting sick & he is just now acting like he feels a little better. He couldn’t keep anything down (including water). It’s not been fun!

In other news…I got my hair done yesterday…It’s not too different, but I decided to be a dork and take a before and after picture, so here you go!

Here’s an update on this book::

First, I must say that even though my husband does not like to take tons of pictures, he is amazing. He took such good care of Jaxon yesterday and through the night. The amazing part is how he worked in the kitchen to make all our puree’s. I had started the project, but Jaxon wanted me, so Joey said he’d finish. Well, Jessica Seinfeld said it only took One hour…..that wasn’t the case for us! Joey didn’t complain at all, he read all the directions in the book and now we have a freezer full of yummy, healthful puree’s for our meals!

We have: Cauliflower, Carrots, Broccoli, Butternut Squash, Red Pepper, Spinach, Yellow Squash, Pineapple, Banana, Sweet Potato. I will let you know how the recipes turn out! My friend Renee has already made the brownies with spinach and the potatoes with cauliflower and she says they were great!

On the coupon front:

boo-boo/busy kitchen

Last night was the Jr/Sr banquet at OCA. There are a few good things about going to these events as an adult. 1. I did not have to get my hair or nails done. 2. I was able to wear a dress that I bought for a wedding last August. 3. I was able to go home and be in bed by 10:30!!!
After eating our normal Saturday morning pancake breakfast, Jaxon needed a bath. I took this picture of him this morning.

About 30 minutes after bath time Jaxon received his first REAL boo-boo. We were playing “Chase me if you want me to get dressed”, a game that is a regular at our house! There is lots of laughter involved! I “caught” Jax in the kitchen and we were running down the hall. As we were running, his head bumped into the door facing on the bathroom door. The laughter immediately turned to extreme crying. I felt absolutely horrible (and still do). Within 90 seconds, Jaxon had a golf ball sized knot on his forehead. We called the Dr. on call & they said to give him Motrin and watch him closely all day. The knot has gone down significantly. I tried to get a picture of his forehead, but they didn’t turn out well.

If you know Joey and I at all, you know that we do not need a special occasion to eat Mexican food, but we certainly won’t pass up an actual occasion to have a fiesta! When we were in Vegas there was an amazing restaurant in our hotel called Isla. Joey has NEVER liked guacamole. I ordered the ‘Mexican city guacamole’ before our meal. I begged Joey to try some & guess what…he LOVED it, and so did I. We liked it so much we craved it all the next day & we gave up eating at Emril’s Delmonico Steakhouse just to eat at Isla once more. It was seriously the best guacamole & nachos I’ve ever had. That’s a BOLD statement! Since we’ve been home, we have craved and talked about that guacamole every week.
Today I figured would be the perfect day to try and recreate the guacamole. I DID IT!! IT WAS SO AMAZING, not to brag or anything! So, with that we also had homemade salsa & chicken fajitas with black beans! I could seriously have this meal daily. I photo documented the meal for you!




We all took a much needed, long nap today. Tonight was the OCA auction. Jaxon & I planned on going, but after a traumatic morning, we decided to take it easy at home! I’m glad we did. It was so great to spend some time alone with my boy. We had a wonderful evening.
As I’ve posted before, Jaxon really likes to help me in the kitchen. A few weeks ago, I made homemade blueberry muffins. Last summer Jax became obsessed with fresh blueberries and I’ve been wanting to make them for a while. They were a huge hit. So much so that he called them cupcakes. I’m thinking if my kid thinks that fresh blueberry muffins are cupcakes, I’m okay with that! Tonight he began asking out of the blue for cupcakes. “mommyyyyy cucake, cuckae mommy, cucake“. Luckily I had some frozen berries on hand, so we whipped up a batch!

He was very pleased with mommy & even said “thank you mommy” without me prompting him!!!! (you can see the aftermath of this morning’s drama….still a little swollen, but you can’t really tell here)

We also made some oatmeal chocolate chip cookies….they are wonderful! I only had one muffin & a half a cookie, so I probably only gained a few pounds!

Curious

I have always been VERY curious about what people eat. I love to cook, always have, always will. I began cooking when I was about 10 years old. Anytime I was away from my family (like at camp for two weeks in the summer), I wanted to know exactly what they had for dinner each night & I couldn’t wait to tell them all about what we’d eaten that week, and if it was good or not(it was usually VERY good, especially the year I cooked!).

For a while now, I’ve been wondering what you eat! What do other normal, working, growing families eat for dinner? Please indulge me on this & let me know what you’ve made (or bought) for dinner this week.

I’ve found a few new recipe sites in the past few weeks! Also, my friend Amber started a recipe swap blog that has really taken off. You should check it out! All the links are now on my sidebar. I hope you find at least one new recipe!

This week dinner has been a little weird for us. When you have one or two in the family that have queasy tummies, you have to take it easy! Because you are going to share….I’ll share too!

Sunday Night…We ate at Earl’s, our favorite BBQ restaurant
Monday Night…We had roast, carrots & potatoes…cooked in the crockpot…YUMMY
Tuesday Night…Jaxon had some carrots & ranch dip, yogurt & pb&j, I had a bowl of honey nut corn flakes & Joey did not eat
Wednesday Night…We had honey nut chicken strips, carrot/celery sticks & mac&cheese
Tonight…Joey had a frozen pizza(quickly before a board meeting) & I’m making salmon patties (since Joey will not be home…he hates them)

So….tell me what have you eaten this week???

It's HERE!!!!!

For the past two weeks, Jaxon has been carrying around the cover for the Cars game we have for the computer. Anytime the commercial comes on the tv, he has a fit of excitement. When we are at the store and he see’s ANYTHING with Cars on it, he says “LOOK”, over and over again! He can spot the symbol for the movie from a mile away.
We have been waiting for this day for a while. This was the first and only movie that Jaxon has been to see. Yes, he fell asleep during the middle of it, but he loved every waking minute of it!

Joey and I have both been planning to take off at least part of the day on NOV 7th to have a CARS day. Yes, I know Jaxon will not remember, but we will! As it turns out (like life always does), the day has turned out to be a busy one. Neither of us will be able to spend time at home during the day. That makes me sad. So… we will be having a CARS night! Joey went to wal-mart at midnight to get the movie. It might not be that popular in other households, but we just couldn’t chance it!! At first I thought we’d have “drive-in” food but instead I made this:

I’ve renamed it Lightning McSagna!!!
I’ll have to think of something clever for dessert! Any ideas?? Maybe chocolate winshield wipers.?!?!!!
